Black Bean and Corn Salad:

2 cans black beans rinsed

1 can kernel corn (wonderful with fresh corn)

1 med. red onion chopped

1 Tlb finely chopped garlic (more if you like it garlicky)

1 carton cherry tomatoes sliced in half Basil fresh or dried

2 tablespoons red wine vinegar ¼ cup light olive oil
