Banana Bread:
This recipe comes straight from the Fanny Farmer Cookbook. You can substitute some oat bran and wheat germ for some of the flour if you like, but it is pretty healthy as is. There is no fat except what is in the nuts and the eggs.
3 ripe bananas mashed
2 eggs
2 cups all-purpose flour
¾ cup sugar
1 teaspoon salt
1 teaspoon soda
As many nuts and as many varieties as you can fit into the batter.
Mix, pour into greased loaf pan and bake at 350 for one hour, check top to make sure it isn’t burning. Cover with foil and bake another half hour. Banana breads are often so dense they don’t cook through, the trick to success is additional baking with the top sealed in foil so it doesn’t burn.
