WATER ROLLS:
2 cups warm water (hot water from the faucet is fine)
1 tablespoon sugar
I scant tablespoon yeast (about 2 ½ teaspoons)
Combine above ingredients and let sit until bubbly about 5 minutes.
Add 1 ½ teaspoons of salt
¾ cup of oat bran
¾ cup of wheat germ
Stir until thoroughly mixed
Add 2 cups of bread flour and continue to stir
When it becomes too hard to stir start kneading
Add one more cup of flour a little at a time and knead.
The flour on this is a little touchy, too much, the rolls are rock like, too little, and the rolls are smooshy. It takes a little experimenting to get just right, but you will figure it out quickly.
Let rise until double in bulk. Punch down, divide dough in half, then in half again and then in half again making 8 even sized rolls. Spray or spread oil or butter or shortening in pan space rolls evenly, and let rise until double in size. Bake at 350 for 20 minutes on bottom rack. Tops will be golden brown. Turn out of pan to cool.
To make cinnamon rolls, roll out about ¼ inch thick in a rectangle
Brush with oil
Sprinkle with cinnamon mixed with sugar
Roll up, cut into 1 to 2 inch segments and place spiral side up in greased pan
Allow to rise, bake
