Peanut Butter Cookies
Peanut Butter Cookies:
Traditional peanut butter cookies are always a little dry. The oil adaption remedies this.
Combine:
¼ cup and 2 tablespoons oil
½ cup peanut butter
½ cup sugar
½ cup brown sugar
1 egg
Add:
1 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla
Mix well.
Cover and chill. Roll into 1 inch balls and place on greased baking sheet about 3 inches apart. You can gently flatten the cookies and they will have a crinkly top or you can do the traditional pattern by dipping a fork in flour and making a pressed mark in one direction and then the other.
Bake at 350 for 10 minutes. Cool for 1 minute and remove.
You can make wonderful variations, use different nut butters, cashew, almond, or hazelnut. Add any chopped nuts you like. Obviously, peanuts are great with peanut
