Blondies
1 cup flour
¼ teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
Melt 8 tablespoons of butter soy or dairy (one stick)
Remove from the heat and add:
2/3 cup brown sugar
¼ cup sugar
Stir until well blended
Cool
Add:
1 egg
1 egg yolk
1 tablespoon light corn syrup
1 ½ teaspoons vanilla
Stir until well combined then add mix in well the dry ingredients.
Spray 8 inch square pan add batter and spread. Bake for 28 minutes at 350.
This is a pain to make because of all the tiny details, but it is majorly yummy. And not the least bit healthy.
Here is an easier version I made for years before I found the above one.
½ cup melted butter (8 tablespoons or 1 stick)
2 cups brown sugar
2 eggs
½ teaspoon salt
1 ½ cups flour
2 teaspoons baking powder
1 teaspoon vanilla
1 cup chopped nuts
Mix all ingredients together. Spray 8 inch pan and spread batter in. bake for 35 to 40 minutes at 350.
Years ago we went to a reunion at the lake house for Steve’s relatives. We were the hit of the day when I brought; chocolate brownies with walnuts, blondies with pecans, peanut butter brownies with peanuts, almond butter brownies with almond and coconut bars with cashews all laid out on a big tray lined up in rows. It was pretty splendid.
