Best Beef Stew Ever
2 pounds of beef roast cut into pieces about one inch by one inch and a ½.
Marinate in a good Chianti to cover for an hour or so.
Sautee drained meat (save the wine) in olive oil. You will probably need to do this in batches.
When all the pieces are nicely browned put all meat and drippings along with the wine and enough broth to cover in a large casserole.
Cover and bake starting out at a preheated 400 and turn down to 350 for two hours.
Chop veggies into approximately1 inch or so pieces, onion, potato, carrot, and celery. Toss in with the meat and cover with more broth just up to the top of the veggies. (Don’t want it too watery.)
Bake at 350 covered for another hour to hour and half until everything is soft and yummy.
