Best Meat Loaf Ever
1 ½ heaping cups crumbled homemade bread crumbs
(the key to greatness is the quality of the bread, if you don’t have good bread use
quick cooking oatmeal)
1 pound of ground beef
½ pound of buffalo
2 eggs
1 red, 1 yellow and 1 orange pepper
2 to 4 stalks celery
2 medium onion
Chop onions, celery and peppers to same size about a ¼ square, add them all to a big mixing bowl along with the eggs, meat and bread crumbs. Smush all of it together. Spray a casserole dish (not a loaf pan, it will never cook in the middle) with cooking spray and push the meat mixture into the pan to fill it.
Bake at 350 for up to 2 hours
It will make a nice crusty top, some people like a tomato mixture on the top that is added before baking and the classic topping was a frosting of ketchup in the 50s and 60s.
There are a million recipes for meatloaf that include everything from soy sauce to a cup of coffee, but this is a good basic recipe that you can embellish however you like.
